A restaurant inspired by the Camino de Santiago will open in Liverpool later this year.
Fans of BBC’s My Million Pound Menu recently saw food concept Pilgrim, made up of Dave Bone (head chef), Jamie Duffield (front of house) and Anthony Power (marketing), agree to the offer of a partnership opportunity from Matt Farrell, co-founder of Graffiti Spirits Group, which will see the food venture open its first restaurant in the North West city.
Pilgrim is the brainchild of Mr Duffield and was inspired by his life-changing walk along a major Christian pilgrimage route.
“I walked the Camino de Santiago, it’s roughly a 500-mile walk, it took me 30 days to walk it,” Mr Duffield said during the programme.
During his pilgrimage through northern Spain, Mr Duffield had a revelation, which would eventually lead to the successful food venture.
“The produce they have to offer, it just suddenly clicked that this would actually be a great concept,” he said.
Following his trip, Mr Duffield convinced his friends, Mr Bone and Mr Power, to help him bring Pilgrim to life and the group is well known in London for their pop-up restaurants, where they offer a menu of Spanish dishes and Spanish wine.
Their menu is all based on the food found along the Camino de Santiago, with dishes based on different parts of the route.
However, following their success on the BBC show, hosted by First Dates star Fred Sirieix, Pilgrim will now relocate from London to Liverpool to take over the mezzanine level of the forthcoming Duke Street Food & Drinks Market with a 60-seat restaurant and terrace.
Due to open in April, the market, which is a collaboration between Graffiti Spirits Group and Urban Food & Drink, will feature Pilgrim alongside six street food vendors and a craft beer and cocktail bar.
